Not installing any updates is not a good idea at all. Since the software/device will be vulnerable for any security issues.
However, disabling update and installing it later is another story. Of course, updates should be installed as promptly as possible especially if it is a critical update.
Mozilla Firefox has an auto-update feature, this feature though is customizable you can disable auto-update and enable later if you need to install updates.
How to disable and enable auto-update in Mozilla Firefox?
For Windows OS 64 bit, open an elevated command prompt. Elevated command prompt or admin command prompt is needed when modifying features that requires admin access.
At the elevated command prompt, browse or change directory to where Mozilla is installed.
Default location would be:
C:\Program Files\Mozilla Firefox
Search for mozilla.cfg, and open it with your preferred text editor.
Or simply type: notepad mozilla.cfg this will open the config file.
Depending on what has been set in your browser, the configuration may not be the same with the text below.

This line:
lockPref("app.update.enabled", false);
It controls how automatic update should behave.
Change the line to the desired state, save it to the same location or simply overwrite the file.
Restart Firefox, and go to the hamburger menu or the three lines located at top right, click "Help", select "About Firefox" and from the window that will pop-up should show that the updates is disabled if the settings has been set to disabled.
Another way to check is to open Firefox and at the URL address bar type: about:config
Don't change any settings on here unless you know what you're doing, or else Firefox may not run as intended.
In about:config search for app.update.enabled
If the settings is set to disabled, it will show as:
app.update.enabled status:locked value:false
Well, if you want to deploy this via GPO I guess you can be creative by copying this file to the location where Mozilla Firefox will read this config. Choice is yours :)

You might want to put the "about:config" option first. Its much easier to do without making accidental amendments
